Gluten-free Acai Pancakes Recipe

INGREDIENTS

2 cups gluten-free flour
3 tsp. baking powder
½ Tbsp. Navitas Organics Cacao Powder
1 Tbsp. Navitas Organics Acai Powder
2 large eggs
¼ cup olive oil
2 Tbsp. sugar
1½ cups milk
Navitas Organics Cacao Nibs, for topping

DIRECTIONS

In a medium bowl, whisk together eggs, sugar, oil, milk, and vanilla extract, then set aside.

In a separate bowl, combine flour, baking powder, acai powder and cacao powder. Mix well.

Pour dry ingredients into wet ingredients and whisk gently to combine. Do not overmix.

Spray nonstick cooking spray on a large frying pan and ladle two scoops of pancake batter into pan. Let pancakes cook on one side for 2-3 minutes then flip.

Repeat until all batter is used. Plate pancakes and top with syrup and cacao nibs, if desired.

Makes 6-8 pancakes
